With an increase in food allergies, sensitivities and intolerances such as Celiac Disease, institutional kitchens are struggling with how to provide customized diets and avoid cross-contamination while continuing to provide their regular meal service. The presentation will include:
- A patient story
- Information about Celiac Disease and the importance of a gluten-free diet
- Tips to avoid cross-contamination
